Cooking Demonstration With Celebrity Chef Jennifer Hill Booker At Epcot’s International Food & Wine Festival

While I was at Walt Disney World last week for the Epcot International Food & Wine Festival, I had the opportunity to attend a Mix It, Make It, Celebrate It! cooking demonstration with Celebrity Chef Jennifer Hill Booker! It was a sold out event and I had a blast! I got a chance to chat with Jennifer and she told me that she is originally from Orlando, Fl but now resides in Atlanta, Ga!

I was so happy to hear that and she shared with me a yummy recipe if you want to “impress” your significant other and “seal the deal” lol. It was a great but EASY recipe that you and I can make and by me loving to cook again, this was a great recipe and I share this along with another one inside!

We got to see Jennifer create party-worthy appetizers out of everyday ingredients. She showed us chef’s tricks of the trade and easy kitchen hacks to create quick and delicious appetizers, tapas and amuse bouches. Impressionable Salmon Recipe:

  • Take a piece of salmon, clean and season, set to the side
  • Sauté spinach in saucepan with olive oil, garlic and other seasonings to taste. Make sure there is no water leftover. You want your spinach dry as possible.
  • With the salmon, add dijon mustard, and cut a slit into the salmon and add your cooked spinach. Add Panko (bread crumbs) on top and put in the oven for about 20 minutes at 400 degrees.
  • I also made homemade garlic mashed potatoes and plated it, it was gone in zero seconds and so good!

Green Strawberry & Bacon Finger Sandwiches

2 oz thick cut bacon, about 4 slices

4 oz cream cheese, room temp

1 tablespoon mayo

1/2 small red onion minced

1/2 cup green strawberries stemmed and diced

1/2 small cucumber peeled seeded and finely chopped about 1/4 cup

1/2 teaspoon freshly ground pepper

1/8 teaspoon salt

1 slices of soft white bread

Method:

Place bacon on a sheet pan lined with parchment paper and bake until crips, about 10 min. Remove pan from oven and place cooked bacon on a paper towel lined plate to cool. Once cooled, chop bacon into small pieces and set aside.

In a med bowl, stir together cream cheese, mayo, sour cream, red onion and chopped bacon until well combined. Fold in the strawberries and cucumber until just mixed. Season with salt and pepper to taste.

Spread the mixture evenly on a slice of white bread and top with a second slice of bread. Repeat with remaining bread and strawberry mixture.

Cut off the edges of each sandwich, saving for a kitchen snack, and cut each sandwich into 8 wedges.

Serve immediately or the bread will get soggy.
