Girls Luncheon With Sweet Georgia Peaches & A Recipe!

Remember a few days ago, I visited Southern Belle Farm? Well, my friend Jen and I had an awesome time pickin’ peaches and that’s when she told me that she had a great recipe for peach salsa. Yesterday afternoon, I headed to Jen’s house for a fab girl’s luncheon and we had…grilled chicken, mixed spring greens with peaches, blueberries, mozzarella, bacon & pecans topped with a lemon balsamic vinaigrette. Later we made peach salsa and it was so good.

Everything taste so yummy and fresh, omg! I have never canned fruit or preserves ever, so Jen taught me how to preserve peaches and it was not as hard as I had imagined lol. Check out all the fun pictures and how we made everything and these recipes would be great for a summer bbq or quick meal since it’s been boiling outside. Enjoy your hump day guys!

This grilled chicken salad was so refreshing and yummy!

Me in the kitchen, I have to start cooking like I used to again!

Peach Salsa Recipe

1/2 cup organic white vinegar; 6 cups chopped pitted, peeled peaches; 3/4 cup red onion; 3/4 vidalia onion; 1 1/2 jalapeno pepper; 1/2  red bell pepper; 1/2 green bell pepper; 1/2 cup loosely packed, finely chopped cilantro; 3 Tablespoons local honey; 1 clove garlic, finely chopped; 1 1/2 teaspoon ground cumin; 1/2 teaspoon cayenne pepper
In a large stainless steel saucepan, combine vinegar and peaches. Add onions, jalapeno pepper, cilantro, red pepper, honey, garlic, cumin and cayenne, bring to a boil over medium high heat, stirring constantly.
{Do not cook your peaches until they are mushy.  As soon as your mixture vigorously boils for about a minute, remove from heat. }

Refrigerate in a serving bowl or cute jars if you plan to use immediately. Canning is a great way to extend the life & variety of uses for the salsa.
If you are canning/preserving the salsa:
Ladle hot peach mixture into hot sterilized  jars, cleaning the lip of the jars, sealing and process in canner for 15 minutes in boiling water.
Serve it up with regular tortilla chips, or make your own using flour tortillas and cinnamon.  This salsa is divine with grilled chicken or pork.  It’s perfect for a sultry summer evening cookout.
