As a Kid I was Fascinated by The Beauty of The Plates in French Restaurants ” I really considered Most of Them as Pieces of Art “I Always tried to create Visually Beautiful and entertaining Dishes ” I remember I was carving my apple at Breakfast every Morning in Front of my Mom Like a Halloween pumpkin ” Making a Different Face everyday .. For Me Playing visually with Food is Magic ” You Create a Piece of Art that you can eat .. And There is Something I find Poetic about The Fact that it’s a Transient Beauty .. Like Life “
TalkingWithTami: How did you hear about the show Chef Academy? How did you feel when you found out you were going to be cast?
As an Actor I go a Lot on Auditions and I came across This one that was looking For Passionate Cook “I JUMPED ON IT ” I went in ” They Liked Me and Brought me Back a second Time explaining That I would Learn From A FAMOUS FRENCH CHEF ” Without saying his Name ” I WAS SO EXITED ” French Chefs are Very Charismatic and Hard, But Most of Them are Geniuses and Passionnate Persons ” I Knew at this Point I was on Board in an Adventure That would Change my Life and expand My Culinary WORLD ” … And it Did .. THANKS To Jean-Christophe NOVELLI ”

One of The Dessert I recently Created and I AM VERY Exited about , Because of The Beauty , Simplicity and Taste of it, is my YING and YANG Creme brulėe . It’s 2 creme brulées in One ” Vanilla and Chocolate ” They are Shaped as a Ying and Yang Sign and Complete eachother Perfectly ” My GirlFriend at the Time inspired me this Dish ..
