Recipe: Quick, Easy But Scrumptious Shrimp Fried Rice

Hey guys so I am back with another fun and quick recipe! I’m all about quick meals because although I enjoy cooking, I’m not trying to be in the kitchen all day either lol. I got a special request to make shrimp fried rice, ok really? No biggie and I know that, that takes a few minutes to prep and even quicker to cook, no problem lol. So I headed to the store and got most of the fresh produced and went to the seafood counter for fresh cooked shrimp. I asked for half a pound and for two people that is plenty!

 

Ingredients: 

Cooked Rice

Shrimp

Olive Oil

Carrots

Peas

Green Onions

Garlic

Sesame Oil

Eggs(two)

Bean Sprouts

Broccoli

I will let you know right now, I didn’t measure anything it’s so simple to make, you use add a bit of this and that and taste to your liking. If you don’t like certain vegetables, you can omit them and substitute for anything you want in your stir fry. I also couldn’t find my wok, so I used a regular cooking pan, works just as fine! I want to say that once I diced up all the vegetables and cleaned the shrimp, that took about 10 minutes. Then you want to make sure the oil is hot, I added olive oil and sesame oil together.

Then once the oil was hot, I added 2 eggs. Scrambled the eggs and then started dumping in all the vegetables. I cooked that for a few minutes and let it simmer with the lid on. After that I added the shrimp and seasoned to taste. You may want to add a bit more of the oils if you feel it’s looking dry. Make sure heat is turned down so you don’t burn anything. After that, I dumped in one bag and a half of white rice. Put the lid back on and let it cook at low heat. That’s pretty much it kiddos and it’s done… enjoy!
