A Fun Galentine’s Day Brunch With Blogger Buddy/Friend Jennifer

What a wonderful afternoon I had at my girlfriend/blogger buddy Jennifer’s house yesterday! She surprised me with a Galentine’s Day Brunch and it was so pretty and festive! Jen is so creative and always comes up with fun ideas to do as far as putting intimate gatherings together!

It was fun to catch up with her and have girlfriend time. We dined on mixed fruit, a fresh salad with vinaigrette dressing, Quiche and chocolate dipped strawberries we prepared together for dessert, yum!

I have never heard of a Galentine’s Day but I plan on doing it with more ladies to celebrate each other and fellowship, what a great idea! Check out pics from our lunch inside and do this with your special girlfriends too, it’s such a great idea!

This quiche was so darn good…YUMMY!

Spinach and Bacon Quiche Recipe:

6 large eggs, beaten

1 1/2 cups heavy cream

Salt and pepper

2 cups chopped fresh baby spinach, packed

1 pound bacon, cooked and crumbled

1 1/2 cups shredded Swiss cheese

1 (9-inch) refrigerated pie crust, fitted to a 9-inch glass pie plate

  1. Preheat the oven to 375 degrees F.
  2. Combine the eggs, cream, salt, and pepper in a food processor or blender. Layer the spinach, bacon, and cheese in the bottom of the pie crust, then pour the egg mixture on top. Bake for 35 to 45 minutes until the egg mixture is set. Cut into 8 wedges.

Together Jen and I made chocolate covered strawberries for dessert! We are coming for yah Godiva lol.
